Hi!
Just got the go ahead that I can incorporate some spelt or kamut in my diet. I have some kamut flour and was looking for recipes. Any ideas how it works in substituting reg or ww flour. Or should I get spelt (think more expensive...)?
I still need to be off oats, choc/cocoa, and processed or sugar substitutes though.
Please share recipes!

I've never used kamut, but spelt can pretty much be substituted for the flour in any regular wheat recipe. Do you use xylitol, or no sugar substitutes at all?

I can't use sugar substitutes but coconut sugar or raw honey should be OK in moderation.
So spelt is substituted cup for cup?
I would still love to hear about kamut if anyone has experience with it. (As mentioned I have kamut @ home)

Both levana and chocolate covered Katie have a bunch of desserts with spelt on their websites.
