I believe it's usually not there instead of oil, but as a substitute for margarine.

Healthy is a moving target. First, it's relative
Second, we learn more all the time so recommendations change, and third, what's good for one person may be bad for another.
Do whatever works best for you. Don't let the orthorexics get you down.

In a meta-analysis of 16 clinical trials, coconut oil was found to increase both LDL and HDL cholesterol levels in participants, compared with nontropical vegetable oils (e.g., sunflower, canola, olive). [3] Coconut oil increased total cholesterol by about 15 points, LDL by 10 points, and HDL by 4 points. Coconut oil also increased these values when compared with another tropical oil, palm oil: total cholesterol increased by about 25 points, LDL by 20 points, and HDL by 3 points.

Right, so it sounds like coconut oil is not the ideal option for heart health. But I imagine that lots of fried food in any oil is a bad idea, while a diet that contains little fried food but uses exclusively coconut oil would be healthier overall, at least according to what we know now.
My point is that labeling a single food or food group as bad isn't a useful way to talk about nutrition.

OP, we have a friend who's are manufacturer of healthy food.
There is refined and non-refined coconut oil.
The refined needs a higher temperature in order to melt.
The non-refined has a low melting temp.
Use the non-refined oil. It's very healthy.
The refined is very unhealthy.
There's a huge difference between them.
