Don't you eat parmesan and other hard cheese? Not all kosher cheese is made with vegeterian/microbial rennet, you know? What's the difference between animal rennet and bovine gelatine in your opinion?
I'm confused as to your questioning ... but the OU will not put a hechsher on cheeses which contain rennet made from animals ... you will quite often find in the ingredients 'kosher gelatin' - but then you'd have the age old question: if beef was kashered before it was turned into the gelatin ? or if one is having hanaah from 'milk mixed with a derivative of meat" no matter how broken down that meat product is it's a coagulating enzyme occurring in the gastric juice of the calf's stomach
bovine = resembling the ox or cow
vegetable or genetically engineered rennet wouldn't have this issue [I don't think]
