It's still morning here, so don't know what I'm making for tonight, but yesterday we all (DH included) made homemade Pizzas. With yummy toppings:
Fresh sliced mushrooms.
Saute'd carmalized onions and sweet potatoes.
(DH did most of the work, he made the dough, rolled it out and made the SP&onion filling). So, I can't really take any credit here... LOL

last night I made:
for the kids: baked salmon steaks, microwaved sweet potatoe, and grated carrots. (It all took about 5 minutes to prepare. While they were eating this I made our supper.)
For me and dh (he doesn't like salmon): Meat and eggplant stew with pasta.

Barley mushroom soup
Seitan with corn, peas, & green beans.
seitan is a fake meat product made from wheat gluten. it looks like stew beef.
