Really easy one pan chicken and rice:

Preheat oven to 350°F. Dice an onion and sprinkle it around the bottom of the pan. Place bone in chicken thighs and/or drumsticks on top skin side up (I remove the skins first). Season well with salt, pepper, onion powder, garlic powder, and paprika. Measure 1 cup of white rice and pour it around the chicken pieces. Measure 1/4 cup ketchup in a 2 cup measuring cup, add same spices as before and mix. Then add enough boiling water to the ketchup to reach 2 cups. Mix well and pour over the rice. Cover pan tightly and place directly in the oven. Bake for at least an hour and 15 minutes and then check to see if chicken is done and water is absorbed.

Thank you, Rutabaga!

Tonight is Shabbos leftovers. Last night we had creamy polenta with a choice of veggie toppings and goat cheese.

How do you make that? And where do you buy cornmeal for polenta? Any brand that you prefer?

Thank you!

Zucchini soup, breaded chicken fingers, honey teriyaki rice with mushrooms.

I also bought some carnival squash (they were pretty!) but didn’t have a chance to put them up. Anyone have a good recipe for them?

I used to make chicken and rice in one pan though I found that although the rice was soft and delicious, it sucked out all the flavor from the chicken. How do I prevent that?

Pull back the skin and season the chicken very well including under the skin, then pull skin back. Place chicken over the rice and water gently - don't spash it over the chicken/wash it off.
Also don't forget to season the rice too, as if needs it's own flavor.

I pour a frozen bag of florets in a pan, cover and the wetness from the still frozen vegetables is enough to "steam" it. Then sprinkle with coarse kosher salt and serve hot.

Thanks. How long do you steam it for?

Roast Peruvian chicken with green sauce.
Peruvian mystery fish
Wild rice pilaf with carrots and almonds
Rice and vermicelli (copy Goodman's without MSG and other chemicals)
Roasted cauliflower

I feel like baking today. I am playing with RA Mom's chocolate cake recipe and adding spice. I highly recommend this recipe as is. It's delicious.

Do you have a Trader Joe’s near you? I start with their corn pepper soup and add one empty container water, about 1/3 cup raw quinoa, a combination of zucchini, sweet potato, celery, red pepper, black beans ( whichever you want, can do all of the or a few or one), and cook until veggies are soft and quinoa is cooked- add some lime juice and cilantro
