Mitzvahmom, I use tap water, the same how I've seen it done a hundred times.

no sauce at all, its spices, and msg free onion soup mix, margerine, and rice, its soo yummy and easy as pie

I do this for Shabbos when I am in a rush:
1 cup of rice
2 cups water mixed with onion soup mix
6 chicken leg quarters
use a 9x13 pan
put the rice in the bottom of the pan
put the chicken on top arranged so it covers the rice
pour the water on top
cover chicken with spices (garlic powder, paprika, etc.)
cover tightly with foil
bake at 350 for 1.5-2 hours.

Maybe I'm doing too much rice then. I did subtract half a cup this time thinking it might help, and I think it did, but I did 2 cups of rice/ 4 cups of water, 2 sweet potatoes cut small, and 6 chicken thighs (no drumsticks attached). I spread apricot jelly over the chicken liberally. Whatever rice wasn't directly under the chicken came out a bit tasteless, but at least it was cooked.
It seems like I need more chicken for that much rice.

No kidding, Defy? I have no problem with rice or potatos and chicken in the same pan ....guess I should be happy .....
