my mother makes this chicken cutlet and rice dish all the time all ingrediants go in raw, I can get the recipe if you want.

shoy, do you know what kind of sauce she pours over it? (dumb question, I'm sure you've eaten at your mother's house before)

Mitzvahmom, I use tap water, the same how I've seen it done a hundred times.

Mimisinger, I won't tell you about my two crockpots sitting around for years getting dusty. Confused

I do this for Shabbos when I am in a rush:
1 cup of rice
2 cups water mixed with onion soup mix
6 chicken leg quarters

use a 9x13 pan
put the rice in the bottom of the pan
put the chicken on top arranged so it covers the rice
pour the water on top
cover chicken with spices (garlic powder, paprika, etc.)
cover tightly with foil
bake at 350 for 1.5-2 hours.

Maybe I'm doing too much rice then. I did subtract half a cup this time thinking it might help, and I think it did, but I did 2 cups of rice/ 4 cups of water, 2 sweet potatoes cut small, and 6 chicken thighs (no drumsticks attached). I spread apricot jelly over the chicken liberally. Whatever rice wasn't directly under the chicken came out a bit tasteless, but at least it was cooked.
It seems like I need more chicken for that much rice.
