1-2-3 cookies

1 cup sugar
2 eggs
3 cups ground nuts (filberts, almonds or walnuts are all yummy)

Mix to form a dough. Roll into walnut size balls. I like to put a chocolate chip in the middle of each. Bake 350 for 20 minutes. Easy and delicious.

I forgot about that one! It's pretty good. And iirc, it calls for baking soda or powder, but it worked fine without it

Pesach lukshen is a basic and can be used in so many ways.

4 eggs
Pinch of salt
1/3 cup water
1/4 cup potato starch.

Mix batter and fry crepes.
Slices thinly for noodles.
Use crepes for blintzes (fill with cheese, ground meat, veggie mix, etc)
Use noodles to create your classic lukshen kugel recipe.
Get creative! You can make Mac ‘n cheese? Fried tacos, noodles salads....

We make a lot of meat, fish, roasted veggies and soups that can be made all year round. I make pecan cookies that are great. I make my regular meatballs but use matza meal instead of bread crumbs. I make my regular crust less quiche or can make potato crust. I love using coconut aminos as seasoning for pesach.

Scalloped Potatoes

Ingredients
9-10 large potatoes
2 large onions
6 Tbsp oil
5 Tbsp flour or potato starch
½ cup mayonnaise
3½ cup chicken stock
½ tsp salt
- pepper and paprika

Instructions
Preheat oven to 350ºF.

Saute onions in oil for 7-8 minutes until clear and soft.

Add the flour/potato starch, stirring well.

Add the mayonnaise and chicken stock. Let cook 2-3 minutes until sauce thickens. Set aside.

Peel and slice the potatoes into ¼-inch thick slices.

Pour 3-4 ladles of sauce on the bottom of a 9- x 13-inch pan. Spread a layer of potatoes going clockwise around the pan. Spread sauce over the potatoes. Add another layer of potatoes and end with sauce on top.

Sprinkle top with salt, pepper and paprika (sauce, potatoes, sauce, potatoes, sauce). If you use a Pyrex or any taller dish, you can have 3 layers of potatoes and 4 layers of sauce.

Bake for about 1½ hours.

I cooked for pesach the first time last year due to COVID and made so many delicious recipes.

Salmon cooked in white wine with mango salsa

Pecan crusted chicken dipped in batter with white wine

Pulled beef served with egg kichel

Potato chip crusted potato balls

Crispy potatos coated in potatos starch and roasted so it’s ultra crispy

Let me know if you want any recipes.

This is a delicious recipe. I double the sauce and freeze it in containers, then the night before I want to make it I take out the sauce and let it defrost. Them I do the potatoes and layering fresh.

I make this with 2 cups almonds and 1 cup coconut. Used to be our favourite but then a year or two back I found a hazelnut and potato starch cookie that has replaced this one. I will look for that recipe and post it here soon.

I have a great recipe for pizza crust. It's mostly almond flour, with some potatoes starch. I make meat pizza or milchig pizza with it.

I don't take out my recipes until much closer to pesach, so I can't post it now.
