I just turned off the flame and want to go to sleep. Can I leave it out overnight? Or better to put big pot of soup in the fridge?

I usually leave on a simmer overnight. I find my soup cools enough to put away in about 4 hours.

I would only leave it out overnight if it was cooking, otherwise I’d be worried about bacteria

Is it a huge pot that was just boiling? If yes, you can leave it out. It will still be quite warm in the morning. My mother does it all the time

I would not put it directly in the frig. It will warm up the other food inside. I know it sounds painful, but I would set my alarm for 3-4 hours and go put it in the frig then.

This is what I have done in the same situation. I go down real quick, stick it in and go back to sleep.

Leave the lid on and go to sleep
No way your 12 qt pot of boiling soup is cooling off all the way in just 8 hours

Depending what size pot. 20 qt? I do it all the time. 8 qt? Never. For my 20 qt pot often enough I can't even put it way first thing in the morning because it's still too hot.
