I bake for my friend who has 7 kids KH
I also bake for my sister in law with 5 Kids KH
And I send to my neighbors and anyone nice enough to take !

I do have a lot of pots and BH have huge ovens - I can bake 4 breads at a time per oven.

I still don't see how that adds up to so much regular and sourdough challah.

Oh thank you.
I neglected to mention that I bake for my sister with many kids BH
I wish my mother would take from me but she has the same baking addiction.

Guess what- there’s always someone who wants it
Either a friend , a neighbor, etc
I usually only have 6 lbs stocked in the freezer
Sourdough I sometimes don’t even have enough to send.

You know… I’m already in my 50’s and never made sourdough. However I just realized that I might have discovered something similar to sourdough before it was a thing. When I was around 9-10 years old I discovered that my mother emptied out all her chometz from the cabinets right before pesach. One day when everyone was sleeping I decided to do something with the bag of flour since it looked like it was going to get thrown out anyway. I found a big bowl a made a mixture of flour and water. It was fun to play with. I slowly added more flour and more water. I kneaded the dough for a while. Then I added more flour and water. Everyone was sleeping. It was just me and my dough. I left it for a while and then came back to add more to the bowl until there was no more flour left. I had no idea how to make challah so after kneading for a while I just left it. I was surprised a few hours later when I heard my mother screaming. The dough grew out of bowl and it was just flour and water! I was in big trouble because first of all it was shabbos hagadol and we were supposed to be chometz free and second of all it was shabbos and there I was making dough. I had no idea it wasn’t allowed. I remember being punished. I almost forgot about that incident. When you wrote about how addictive making sourdough could be and how attached I could be to the dough I really didn’t understand until I remembered this incident from over 40 years ago!
Anyway, this week I will still enjoy my rich and sweet challah. I wonder if I’ll take the plunge and switch to sourdough? I might want to because it really does seem like a challenge.

What else do you bake for Shabbos? Which divine cakes?

You see, you’re addicted to sourdough baking before you even knew it.
This story gives me more hope and I believe we can get another person added to the sourdough baking clan.

Heres a a tiny little secret.
My own family prefers fruits and vegetables and proteins. They hardly eat challah or sourdough and zero cake.
They love the smell, they love the hype but they don’t enjoy eating it.
I have a Bundt cake on my counter every week but it never gets sliced. My lady takes it home every Thursday when I bake a fresh one.

So I’ll bake wafer cake and kokosh cake and lemon meringue , etc and give to everyone else.
I am the favorite aunt though….

Nopes. Never have and hopefully never will.

It’s a passion, once it turns into a business it’s exactly that, a business.

But my standing joke is,
If I want to find out if they really love my food I should start selling it and see if they’ll still all come running…

It’s genetics.
I won’t tell who they take after , but it’s not me!!!

Please don’t be a fly in my kitchen. Flies in a kitchen are a nightmare.
Just be a person in my kitchen and all will be well.

I don’t bake wafer cake weekly, theyd get bored of it.
But similar style cakes
Strawberry short cake, lemon meringue , wafer cake, cream cakes, etc

My son once tasted a tiny piece of wafer cake and gagged.

My kids inhale cake and cookies. I can't make enough!!!! And I won't say who they take after Smile!!!

What do you make for a standard Shabbos? I should learn from you and serve more fruits and veg. I would love inspiration!

I don’t think I can be much of an inspiration because my kids will eat the cucumbers as I’m cutting it. And the carrots while I’m peeling it for the chicken soup.
They will munch on peppers and tomatoes and mushrooms and celery.
I don’t even get to display it nicely and it’s gone!

Fruits I just put on a huge platter and I blink and it’s gone.

I take zero credit for this. I just thank Hashem for it.

It would really help my weight!

u can bake "regular" challah using sourdough starter instead of yeast. Have a good recipe and if u get the timing right in regards to rising, u can't really tell that it's not regular yeast challah

So here's the update-

I followed what you had said, the challah tastes good and looks good but is still not fluffier.

I'm thinking of following your method this week, but will either not shape at all, or just shape right after the six hours and then put it in the fridge until baking.

What do you think can go wrong if I try it that way?

Shaping as per OP's instructions.
Shaping in sourdough language means to form the dough into a tight ball.
