Being that pesach is Monday night this year. We usually turn over motzei shabbos but no time for cooking then.

This is for those who DON'T have a pesach kitchen

You would still need challah for that pesachik shabbos hagadol. but other then that yes, fully pesachik

Cooked food pesachdig but including challah
Hopefully will be nice weather and we will eat the challah outside and then have pesach crackers with the meal

Pesach shabbos food is very similar to regular shabbos food, so why not.
The only thing different is challah which we'll have on a disposable tablecloth which will be wrapped up before the rest of the meal.
And cholent (either we'll go with the pesach cholent, or put up a chometz crockpot one in the laundry room and wash it out in the bathroom after shabbos).
Sticking to chometz would be too hard all around.

Yes, of course. Pesach is monday night. Sunday is too late to turn over and line everything and cook everything.

One of the smartest things I've ever done is to make my menu and shopping list and schedule right after Pesach the year before. That way everything is fresh in my mind and I have a pretty good idea of what will and will not work.

And last year, right after Pesach, I decided that Shabbos Hagadol absolutely must be Pesachdik.

So it will be, IYH!

I'm also thinking of making a chometz cholent in a crockpot, we really like it better than pesach cholent

Yes, of course.
I generally serve tons of vegetables and protein anyway on shabbat.
We don't eat cholent.
We will have challah outside.

I'm hopefully not making shabbos hagodol this year! My mil is moving in to me for Pesach, so hopefully we will go to her for shabbos.

I think we'll do the same. Make sure everything is clean before shabbat.
Hopefully get to the end of shabbat with little to no leftovers, wash everything up (or use more disposables to make things easier and quicker) and turn over motzei shabbat or Sunday morning.

I wouldn't spend more than 2 days cooking for seder night and 1st day anyway.

Not sure yet. I may turn over half of my kitchen before shabbos and the other half after. Or do it fully before and keep one oven chometz (I have three)

No.
Sink has to be no hot water (Yad soledes bo) for 24 hours. Oven self clean whenever and it’s done.

I'm not sure yet. If I'm able to get my house pesachdik by then, we'll wash on pitas since they make less crumbs than challah. I will probably give my kids kitniyos cereal. My rule is no cheerios between purim and pesach.
