I’ve only used/ever heard of potatoes

I’ve also gone to a lot of different programs that only use potatoes as well

Another vote for potatoes.

It’s one of my favorite parts of the sedar. So hungry at that point and love that boiled potato dipped in super salty water.

Honestly never heard of carrots being used, and from responses here it doesn't seem like it's common. Not sure why OP thought to put these two options as the choices....
Radish is known to be a common one in certain communities
But we (Chabad) don't eat Radish and garlic on Pesach

I grew up with potato. DH uses celery. I DD refuses to eat celery so I make her potato
