I know it's not the softest cut, but any tips or recipes to make it come out really good and maybe even soft?

Its not meant to be soft you dry roast it and slice it thinly like roast beef.

My MIL makes a delicious pineapple roast with this. I don’t know what the recipe is but maybe you can google. I think she cooks it low and slow.
