Guess my humor was a little too subtle... the only pineapple cake I ever heard of before yours is "Pineapple upside down cake." I think you put pineapple rings on the bottom of the pan and bake it and then flip it upside down out of the pan before serving it so the pineapple rings are on the top.
Oh well. sorry my attempt at humor failed... hopefully the recipe won't! LOL!

So has anyone made this with nuts not coconut and tasted it as well? I'm curious how it is and I'm out of coconut but have ground nuts.

Delicious!
I just made this cake. A little too moist, but yum. Not too intensely flavored, which is a plus.
