I'm confused about the coffee part. Is it instant coffee, or regular ground coffee? Also, can someone suggest a brand of coffee that tasted the best? Thank you Pinktichel for this recipe! Sunny

1 tbsp instant granules in 1 cup boiling water. We use Taster's Choice or a cup of strong dark tea for honey cake.

2 eggs
3/4 c. honey
1 c. sugar
1 c. oil
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
2 1/2 c. flour
1 c. strong coffee

Preheat oven to 350. Mix all ingredients together. Pour into greased 9x13. Bake until toothpick comes out clean.

I made SO many of these last yr and not one failed. I froze them and they were so moist and delicious when defrosted.

Do you make this in a mixer or by hand in a bowl?

Anyone make this in 2 8x8 square pans? If so, what temperature and approximately how many minutes till done?

For anyone who has tried it, does substituting applesauce for some of the oil affect the texture or taste?

Thanks

OMG I just did twice the recipe and didn't realize I was suppose to put a cup boiling water!
Did anyone do this mistake? How should I expect my cakes to be?

I usually use prepared instant coffee, but any prepared coffee will do.

With this recipe having baking soda and baking powder, how much do the cakes rise?

Id like to know how much space to leave when filling different size pans with batter?

I think I usually leave 1/3-1/2 of pan empty and sometimes its peak is higher than height of pan

I quadrupled the recipe. I’ll probably do another batch this week, my family loves it!
I gave our seminary girls guests a loaf to bring back to their dorm.
I added some nutmeg. Hat was a great decision!

Someone on page 4 of the thread said it came out good with applesauce. I'm about to make it now subbing applesauce for half the oil. I can't decide if I'm also going to swap out the coffee for OJ...

Thanks for bumping this! Ds wants to bake honey cake this afternoon and now I have an easy proven recipe for him. Will probably double it if it’s as good as the reviews.
