Deli quiche

4 eggs
half cup soy milk or similar
pinch salt
1 T oil
half a red onion, cut up
1/2 cup spinach leaves or 10 oz package, defrosted
12 small tarts, one 9 inch tart, or a package of 4; defrosted
4 T mustard
4 oz cold cuts, any; cubed

Mix your eggs, liquid and salt. Add the spinach, if it was frozen, squeeze it out as you add it. Brush the tarts with mustard and pile your cold cuts in them. Top with the liquid mixture and place on cookie sheet; bake at 375 for about 20 minutes or until set.
