While perusing the internet (instead of working) I found this recipe on Oprah.com for Matzah Pizza

Try chef Spike Mendelsohn's tasty pizza recipe, made with matzah!


Ingredients:Makes 1 pizza


1 pound matzah , broken up
3 eggs
1 1/2 cup oil (reserve 1 Tbsp. for frying pan)
1 large onion
2 garlic cloves
1 can (6 ounces) tomato paste
1 tsp. chopped basil
2 or 3 cups mozzarella , shredded
Kosher salt and cracked black pepper to taste
Preheat oven to 350°. Soak the matzah for 10 minutes in warm water and squeeze well. Add the eggs, oil and salt and pepper to taste. Mix well. Press the mixture out on a pan, leaving a little edge on the sides. Bake in 350° oven for 30 minutes.

Drop a tablespoon of olive oil in a pan and sauté the onion and garlic. Add the tomato paste and 2 cans worth of water, season with basil, salt and pepper. Cook for 3 minutes and pour over the crust. Sprinkle with plenty of mozzarella.

Bake in hot oven until cheese is bubbly (about 15 minutes).

Sounds yummy! I don't have a chalavi oven so I'd have to double wrap it. Anyone want to try it first???

it seems yum. maybe I'll try it with the leftover matzos. I am just wondering if this recipe is similar to the Chametzdige Pizza recipe.

Thanks for posting but I wanted to share my experience:

I made this on Friday but wasn't happy with the results.

After I put it together, I realized the 1 lb of matzah was too much so I used 1/2 of the dough for a separate matzah kugel and added sauteed onions. That came out great. I spread the remaining 1/2 of the dough in a 9x13 pan and baked it but it was still too thick and tasted like kugel. My sauce and cheese were just ok, not great. So, next time, we'll stick with our favorite plain matzah pizza. It sounded so good, though!

Oh my gosh - the best matzah pizza is so simple: Shmear a matzah with tomato paste to which you added water, garlic, salt and whatever else you may use on Pesach, top with yellow cheese and sliced olives or mushrooms. Bake a few minutes in toaster oven. When we're home, we live on it all week! We bought a toaster oven just for this!

I just did the slap tomato sauce (agvania meruseket) on teh matzo and sprinkled cheese on top of that, on my PLATA!! we didnt have time to kasher our milchik oven!!

what I've done and is a big hit ... is make an omelet and after turning it I put slices of zucchini, squash, tomatoes onions, spices and shredded mozzarella cheese ...

we did like this......sprinkled water on the matzah three layers deep....added ketchup and sprinkled cheese then on one third put olives on another third hotpeppers and the other side plain...delish!!!!!!!!!!!!!
