I'd prefer a side dish that is not sweet but any ideas are welcome, I have about 5 to use up and only my husband and I to eat them. (unless I can use it for shabbos day lunch when I have guests, but that would need to be cold).
ideas?

I like them roasted.
Peel or leave the skin on, slice, drizzle with olive oil, sprinkle with sea salt and pepper.
Cook on 425 till desired crispiness.
You can also put them into chicken soup, or make sweet potato soup.
If you live in Baltimore, I'll take them. I use up at least 5 sweet potatoes every week.

Dining In has a great recipe called Crunch Topped Sweet Potato Pie. It's quick and easy to make, tastes great cold and is delicious! I can post the recipe if you want. It's sweet, though.

KBD lightens up- recipe for sweet potato salad, actually looks quite good.

Rinse well slice thinly(unpeeled) drizzle with olive oil and bake delicious,or you can make sweet potato french fries.Yesterday I made a veggie soup and just grated sweet potato and added it.For shabbos lunch you can put it into the cholent.

I make a really good sweet potato salad. The sweet potatoes are cut into cubes and then roasted with red peppers, balsamic vinegar, garlic etc. There is a maple dressing that you toss with the sweet potatoes after they are roasted. It's delicious, and it's great when served cold. Let me know if you'd like the exact recipe.
Also, this sweet potato shepherd's pie is excellent. And it freezes well too, if you want to freeze half of it for later use since you aren't serving that many people.

Spicey sweet potato fries, made with garlic powder, cumin, black pepper, salt... Baked in the oven - it's delicious.
I also like sweet potato "coins", thinly sliced with a splash of olive oil and salt.
This one is not a salty one, but not too sweet either. Sweet potatoe souffle with orange juice, wine, oil, salt and eggs.
I have recipes for all of these.
GreenEyes, I too would love the sweet potato salad recipe please.

Sweet potato cream soup is super yum!
you can make it sweet with cinnamon or spicy with cardamon, white pepper, dill, paprika. Everyone raved!

wow, I wrote this right before I went off to work, and you ladies sure kicked in!
I like the roasted sweet potatoes I can make that for supper. Now what to do with the rest? the sweet potato salad sounds cool...
and sorry defy, not in Baltimore but when I ever head down there, Il be sure to bring u some!

sprinkle some brown sugar on top, spray liberally with cooking spray and put in the oven at 350 for about 45 minutes - the sweet potatoes get all crunchy and caramelly - yum!
