I found this recipe in the Pesach section of Kosher by Design. The author writes it offers the sweet taste of blintzes without any of the work. Has anyone made it and can give me a review? I'm including the recipe here, so you can all tell me what you think of it.
4 large eggs
1 cup sugar
1 teaspoon vanilla
1 teaspoon fresh lemon juice
16 ounces farmer cheese
1 matzo board
cinnamon/sugar
Preheat oven to 325 degrees. In bowl of electric mixer, beat eggs until light and fluffy. Add sugar, vanilla and lemon juice. Mix in the farmer cheese.
Line a loaf pan with foil or parchment paper, leaving foil or paper hanging over all four sides. Break matzo in half and place in double layer in bottom of pan. Pour cheese mixture over matzo. Sprinkle with cinnamon/sugar.
Bake uncovered for 40-50 minutes or until set in center. Remove from oven. Let cool in pan. Using foil or parchment, lift loaf out of the pan and transfer it to your serving platter. Slice and serve.

There's an easy recipe in Spice & Spirit called "Blintze Loaf." It's similar to this one but I think it's a bit easier. You don't need a mixer for it. It calls for margarine, which I've substituted with oil, and I make it regularly and it's very good. It uses cottage cheese. The only thing I would change besides the oil in the S & S one is, make sure to use salt-free cottage cheese or it comes out gross. I made that mistake the first time I made it and never again! (The recipe didn't specify, but trust me.)

Since I'm not making for Pesach, I guess I'd use cookies or some sort of regular crust anyway.

I've made this, colorful! It's super easy and everyone loves it!! I think I've made it both on Pesach and Shavuos for several years, and it's always a hit! It is what it says- the taste of blintzes without the work.

Thanks! Did you use matzah when you made it for Shavuous, or something else as a crust?
