Sprinkle with a bit of cinnamon, pour a little water or apple juice in the bottom of the pan and bake at 350 degrees.
I like to use Cortland apples for baking.

Pop into a glass bowl in the microwave for 20 minutes per apple.

I peel it and then roll it in a little suger/splenda and cinnamon. I bake it for a really long time at a low temp. Like two + hours at 300 degrees. I put it in and forget it. It comes out mushy and almost like the inside of an apple strudel without the extra calories. The worst thing is when the apple is too hard and still raw.

The YUMMIEST baked apple recipe that I've tried is:
1- peel apples and scoop out just the top of the core
2- coat the apple in oil (or water if you are being health conscious)
3- Mix 1/4 C ground walnuts, 1C sugar, 4 teaspoons of vanilla sugar and lots of cinnamon together in a bowl.
4- Roll apples around in the mixture until coated
5- Place in a foil pan and bake at 300 degrees for 2hrs, until really soft.
6- serve warm

Core the apples. Bake uncovered at 375 for 35 minutes. Don't over-bake - they will continue to soften after they come out of the oven. If you over-bake, they will bust and wrinkle.
