I saute zucchini with some garlic and onions and then boil for a bit in a mixture of tomato sauce, some ketchup and sugar. YUM!!

saute onions. add cubed zucchini and cubed eggplant. Salt & pepper. Very simple and tasty.

zucchini boats:
slice zucchini in half lengthwise
scoop out inside leaving a thin outer layer
sautee onions, mushrooms, peppers and inside of zucchini
add eggs and spices to sauteed vegetables
spoon into zucchini shells
you can make it milchigs and top with shredded cheese
or fleishigs and mix ground meat with veggie mixture
bake uncovered

thanks everyone, but lol- I forgot to put in the word "kugel" in my question.

I use the same zucchini kugel recipe the whole year - but it does have matza meal. I think it definitely needs a thickener of some sort b/c otherwise the zucchini will release too much liquid while baking and make the kugel too watery.

I just made sauteed zucchini. yum!
sautee one onion in two Tbsp olive oil for 2 minutes on medium heat. add 4 cloves crushed garlic, 2 thinkly sliced zucchini, oregano or basil, salt and black pepper. saute for 3 minutes. lower heat to low and cook, covered for 10 minutes.
I am also making a pureed veggie soup of sweet potato, parsnip, carrots, zucchini, onion, garlic and salt.

Slice up 6-8 zucchini into chunks. Boil. Squeeze out excess water when cool.
Mix together the mashed, drained zucchini with 1 cup of mayo, 1/2 cup of onion soup mix, and 5-6 eggs.
Put in a 9x13 pan and bake for about an hour at 350.
It comes out like a souffle, I serve it in the same pan I bake it in because it doesn't cut into pieces very well. If you want it stiffer you can add potato starch.

I tried a few different idea,s nothing worked. So one thing I learned is NOT to use the fine grate ron the machine, only the big coarse grater.
Also, I mix in ground chicken to the mix and sauteed onions for flavor.
