Trips but no sukka- how?

We only eat in a sukka (including shehakol) and this year chol hamoed is "perfect". What kind of things can My DH and I do together? where can we go? Anything that would cause us to need to drink is an issue and extended trips also run into food issues. Any ideas? I'm sure this is not a new issue- what does everyone do about this?
And I thought of a pop up Sukka but is it worth it, we dont even have a car...

try to find places that have a succah nearby - like perhaps a pizza shop ... or a succah mobile or a jewish activity that provides the succah ... or a fold up box and a bamboo matt ... have succah will travel - what about renting a car for the outing ... What

brings a story to mind when we were out one succos - my sonny boy ten about 5 refused to eat anything - I had to point out it was raining - didn't help much ...

when traveling, most hold that shehakol is okay... so deli slices, shehakol cake...

really hard. on sukkas and pesach we do not go on trips. We have a tradition: the Sunday after Yom Tov, we make a huge family outing. The kids love it. on yom Tov we visit family, engage in the local learning contests, etc.

-Either arrange to go to a place that has a Sukkah
-Buy a pop-up
-Make a makeshift Sukkah out of your car: park near sidewalk, open passenger door, place Schach on open triangle part (between car and open door), and sit underneath the Schach (I know someone who does this when traveling, at the advice of his Rav)

Im not sure what other people hold but this is our standard.
Let's say we dont take a car, what are our options for a sukka? or a trip idea?

We don't go on trips on chol hamoed sukkos because of this - it is not just finding a sukka for eating in, but also we are supposed to be in the sukka as much as possible - not running away from it.

We invite other families or visit friends/ families in our/their sukka. Or else we do fun things at home in the sukka.

I guess you can go anywhere where there are kosher resturants with sukkos. How about Manhatten? I'm sure there are plenty of fun things to do there.
