Since three large kiddushim are served in shul, I'm only making the fish course for the full meal we eat at home. Otherwise, I'm only making the fleishey course at home, and I'm having both my kids, BIL, (all fusssy eaters) as well as some bochrim for the meals, so I'm making very simple food. Also, food dries out on the blech if it sits for many hours (such as Simchas Torah by day when we make kiddush at home like 3 or 4 PM) so I'm making more cold side dishes that I can just stick on the table in bowls.

Menu:
Gef fish in tom sce for Shabbos day
Green salad for Shabbos day
Cholent for Shabbos day

Friday night (Shmini Atzeres)
Motzei Shabbos (Simchas Torah)
Sunday day (Simchas Torah)
eating at kiddushim in shul

Baked chicken- no idea what kind yet, but I'm making it in 2 separate pans so it doesn't get too dried out on the blech.
Beet and corn salad - I'm having fussy eaters but I like it, and it's healthy! Plus it makes a lot, and since it's usually just dh and myself for Shabbos, I'm looking forward to it.
Green salad
Cranberry sauce - not everyone likes it, but too bad. DH likes it and it's already in the freezer !
Green beans with the bottled sauce that I make a lot. The recipe is posted here. Can be served hot or cold.
Colorful noodle salad with a bag of frozen veggies

Dessert: I have 2 choc pies in the freezer and 3 honoeycakes and I'll put up water for tea.

I'm thinking to add some rice to the chicken bekelach. It'll help with the chicken not getting overdone.

Just a tip: If you put under a pan of water and place pot of food into that on blech or hotplate, food will stay moist and will not burn.
