anyone have a good meatloaf recipe?
something my kids will eat
I'm looking for more meals idea and I'm thinking maybe this would go .

It's really easy!!
Make a mixture like you would for meatballs.
But, instead of shaping it into balls, shape it into a loaf.
Spread Ketchup and Duck-sauce on top.
Cut up some potatoes, sweet potatoes and carrots, and put them around the loaf.
Pour about 1-2 cups of water on the bottom of the pan.
Cover and bake until done.
YUMMY!!!

do you have a recipe? I never made this.
when you say put potatoes around teh loaf - you mean in the pan - like use a bigger pan then it fits.

One kilo of meat
1 - 2 eggs
matzah meal (about1/2 cup. the mixture should be firm but not stiff)
About 1/2 cup of bbq sauce or ketchup.
Garlic powder, whatever spices you would usually use.
I add a splash of soy sauce.
Mix the meat, egg & matzah meal together
Add seasoning sauce
Form loaf and bake at 180 for 60 minutes
Add more sauce on the top and sides.
Bake another 30 minutes.

Another good one from Toronto Chef Michael Bonacini. Not your ordinary meat loaf, its great with his Macaroni and a green vegetable for a "retro" dinner!!!!

30 min | 10 min prep
12 muffins
* 1 1/2 lbs ground beef
* 1 1/4 cups finely chopped onions
* 1 cup breadcrumbs
* 2/3 cup ketchup
* 1 dash hot sauce
* 1 dash worcestershire sauce
* 2/3 cup finely chopped fresh parsley
* 3 large eggs, lightly beaten
* 1/2 teaspoon thyme
* 1 teaspoon salt
* 1/2 teaspoon pepper
* barbecue sauce, for glaze
1. Combine all ingredients in a large bowl& mix until well blended- do not over mix.
2. Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
3. This will be used for unmoulding after they are cooked.
4. Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
5. Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

I very easy recipe for 2 toned meatloaf but uses chicken. Its delicious & worth trying.
Two Tone Meat Loaf
2 lbs. = 2 layers (You do the recipe below twice)
1 lb. ground chicken
little less than ¼ c. oil
1 c. bread crumbs
¼ c. water
¾ c. seltzer
3 Tbs. sautéed onions
1 tsp. salt
2 eggs
1 clove crushed garlic
1 tsp. cocoa (for the second layer only)
Combine ingredients for the first layer in a bowl. Pour into a lined challah loaf pan. Combine ingredients for second layer, adding cocoa. Add to baking pan. Cover & bake at 350 for 1 ½ hours.
Sauce for Meat Loaf
2 med. Onions
½ pepper diced
½ squash grated
dash of salt
Sauté onions in oil. Add pepper and squash. When done add ¼ c. water. Cook on small - medium flame for 30-40 minutes. When ready to serve add 1/8 c. diluted corn starch diluted with water.
