Potato salad

Five pounds potatoes (I use Idaho)
1/2 - 1 teas sugar
2 bunches scallions

1 1/2 cups mayonnaise
3 teaspoons vinegar
1 teaspoon salt

Boil up pot of water with some salt. When water is boiled, put in 5 lbs. potatoes. (rinse the potatoes to clean them. Don't peel them). Boil until fork inserted into potatoes goes in smooth (45 - 60 minutes). Don't over boil - potatoes will fall apart.
Remove potatoes from water right away, and soak for about five minutes in cold water (same pot). Remove from water and cool for about 1/2 hour. Peel potatoes, and dice them (you could do with peel too, or do with red potatoes and leave unpeeled but potatoes have to be very clean - I find it easier to just peel them.)
sprinkle with 1/2 - 1 teaspoon of sugar. Slice 2 bunches of scallions into potatoes (I only use the white part, and the stiff part of the green).
Mix together about 1 - 1 1/2 cups mayonnaise, 3 teaspoons vinegar, 1 teaspoon salt. Generous mayo is important to make this taste good. Mix well, pour over potatoes, toss. This can be dressed in advance. Lasts well in fridge for two days.
I've seen it done also with some grated carrots added. It adds color. Also, some people put in diced pickles.

Only made this once, but it was delicious!

First of all, there's no E in potato.

I use red potatoes.

Add mayonnaise, mustard, chopped Israeli pickles, and canned peas.

Season with garlic salt, onion powder, pepper, and paprika.

Why? It's not spelt that way in the British Isles.
