Freezing chopped raw vegetables for soup

I'm making a huge vegetable soup for a party next week.
I'd like to peel, chop, and freeze the raw veggies now, then cook up the soup fresh next week with those vegetables.
Do you think the frozen raw vegetables will taste as good as fresh?

If you make sure to seal them well, they should. I have done it many times and I don't find that my soups when I use frozen vegetables are any worse off.
I would put in a freezer ziploc bag and suck out as much air as possible.

Yes, I wanted to put chopped onions, carrots, celery, leek (and mushrooms, not sure if I should freeze those though) in Ziploc bags. And then I'll just have to add the split peas, barley, liquid, spices, and flanken next week.

Find out if you're makpid on frozen raw onions. I am not which makes my pre-dicing much easier, but some are.
Mushrooms come in packages of stir fry frozen, so I think it should work. I never have actually personally sliced and frozen them, though.

Thanks! Good to know about the mushrooms. Makes things easier.
If I chop onions ahead of time, I usually add a bit of oil. Thanks for reminding me!
I think I'm going to measure out the dry ingredients as well and place them in a bag, so I can just dump them right into to the pot.
