EASY but nice salad (parve/milchig)

I was asked to make a salad for a Channuka party (they are serving milchigs). I don’t have any special ingredients in the house, just basic things. And I won’t have much time to cut it up tonight after I get home before the party. I was thinking to make a corn salad (canned corn, pickles, peppers, red onion and mayo), but is that too lame? What else can I make that’s easy/quick but will look nice? TIA!

I like this one, and it's quick & easy and a favorite so far with guests:

One can of blackeyed peas, rinsed
One can babycorn, chopped
Grape tomatos halved
Red onion diced (I don't usually use a whole one)
Avocado diced
Olive oil, salt, pepper, dill, lemon juice

Serves well chilled also, refrigerates nicely...double it for bigger proportions

Hmm, what DO I have... some tomatoes ( I thought about tomato salad, but I don't have enough tomatoes), one avocado, some cucs, peppers, carrots, onions, potatoes, canned corn, canned beets ( Rolling Eyes ), canned peas, pickles...I think that's pretty much it for salad-like ingredients. I guess potato salad is another option, but I am not sure I will have the time to boil and dice the potatoes. I also have the basics, like eggs, garlic, mayo, oil, lemon juice, vinegar, etc

A corn salad can be really good. And the peppers make it pretty.

What about potato salad with a little bit of pickels, a little onion, and mayo, salt and pepper. It's a little fattening but people always love that. I sometimes put cheese in or if it's for a fleishig party, pieces of deli or hot dogs. I love it because it's such a versatile salad.

HY, what's your recipe for the pasta salad?

Potato salad is a good idea, but I don't think I will have enough time to boil, peel and dice them.

Thanks ra_mom! Two questions:

- how many cans is 3 cups?
- I've always made corn salad with mayo. Does it taste better with the dressing you posted in that thread?

Sorry this is so late! You're probably at the party already.
I believe 3 cups is equal to somewhere between 1 and 2 cans. Can you measure one you drain the corn?
I love this dressing, but mayo is probably also good.

Just wanted to report back (I know, I should be sleeping). I made ra_mom's corn salad and it was delicious and a big hit. I ended up using her dressing recipe (and 2 cans of corn). Thanks everybody!!!
