Oven-baked schnitzel

I marinate in duck sauce, coat w/ breadcrumbs (freeze), spray with a bit of oil and bake - not too long. I thikn about 10 minutes each side, sometimes a bit more on the second to be sure it's baked through.

I find that I have to add oil to the pan after the first 10 minutes when flipping over. I wanted to bake to be healthier but I'm using so much oil...

Dip cutlets in a combination of soy milk and eggs (depending on how much shnitzel you are making)

Dip in seasoned bread crumbs

If the cutlet is not covered complete then repeat above.

Place on a sprayed wire rack that is sitting in a cookie sheet.

Bake at 400 for about 20 minutes.

You can use ground nuts, cornflakes crumbs, felafel mix or even potato chips.

I don't want to coat them at all, I just want to cook the schnitzel meat so that it stays moist. am worried if I just bake them they'll go really dry

Marinade then first and then bake for about 5 minutes on each side (if they're the thin kind).

But yeah, chances are they'll end up on the dry side, especially if you reheat them.

I have a recipe s/w where you make a mixture of cornflake crumbs, oil, spices and maybe an egg? Mix it all together, throw in the cutlets and stir. Then spread the whole thing in a baking pan and bake. It was very moist & yummy. If a/o is interested, I can try to find exact recipe!

the best and easiest recipe ever!!!!
Honey Mustard Chicken Breast

4 chicken breasts
1/4 cup dijon mustard
3 tbsp Honey
2 tsp lemon juice
2/3 cup bread crumbs
oil


Preheat oven to 37s

Mix first 3 ingredients
Put bread crumbs in a seperate plate
Dip each peice of chicken breast in honey mustard mixture, then in cread crumbs and lay flat in a 9 by 13 pan.
drizzle oil over the chicken when done and bake for 20-25 min

I actually found a good one on this site but didnt' know what to call it if you want exact measurements let me know: marinate shnitzel with mayo honey and soy sauce and mushrooms and then poor in pan and broil or bake on both sides
very tasty! and not dry!!! let mek now if want exact measurements!
also found one in mishpacha once for chinese chicken delicoius!@

Or they dont have a fleishig oven. I only recently got one, so I only started baking it now too. So much healthier, easier, and quicker.
