Carrot Salad

Does anyone have a recipe for sliced carrots with a dressing that includes ketchup, sugar, vinegar, mayo or something like that? It's a tangier kind of salad. Thanks.

Sounds similar to a marinated carrot salad recipe. It is a yummy salad, and especially when you like carrots. Smile

Hope this helps:

Marinated Carrot Salad
2 pounds carrots, peeled and sliced into rounds
1 (10.75 ounce) can condensed tomato soup
1 cup white sugar
1 cup vegetable oil
3/4 cup white vinegar
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon mustard powder
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 large onion, chopped

DIRECTIONS

1. Place the carrots in a large pot and fill with enough water to cover. Bring to a boil and cook until carrots are tender. Do not over cook, the carrots should be firm but easy to bite into. Drain and rinse under cold water to stop the cooking.
2. In the container of a food processor or blender, combine the tomato soup, sugar, oil, vinegar, cayenne pepper, salt and mustard powder. Blend for about 3 minutes or until creamy.
3. In a large bowl, mix together the carrots, green, red and yellow bell peppers and onion. Toss with the dressing, cover and refrigerate overnight. The longer this salad is allowed to sit, the better it is.

My Bubby's saucy carrots

8-10 medium carrots, thinly sliced
1 medium onion, finely chopped
1 large green pepper, finely chopped
2 tablespoons tomato paste
2 tablespoons water
1/2 teaspoon thyme
1/2 cup oil
1/2 cup of vinegar
1 teaspoon salt
1/2 teaspoon mustard powder
1-2 cloves garlic

Cook carrots in water to almost cover for exactly 8 minutes. Drain well and combine with onion and green pepper. Blend remaining sauce ingredients in a blender or food processor and combine with carrots, onion, and green pepper. Marinate in refrigerator overnight. Serves 6-8 as a side dish.

Is this served hot? Sounds raelly nice. I may try it for Fri night.

Grate carrots
add tinned pineaplle (cut in pieces) and juice
add lemon juice to taste
and sugar to taste
optional granish - sprinkle dessicated coconut just before serving

like I said VERY EASY and also very tasty.
