bleach might work but it can also have the opposite effect. if you use it too much too often then it might start looking gray. (which sounds like what happened)
delicate balance.

also my husband uses shout on his shirts to make the collars and sleeves look whiter

some muscle power to scrub out any stains before they set in - like ring around the collar/sleeves or any food spills ...
add baking soda to the wash and bleach ... along with your regular detergent ...

Soak the whites in a basin that has Cascade dishwashing gel diluted in boiling hot water, for a day or so.
