Need dressing for cooked sliced beets

I am trying to use up the canned goods I have before Pesach, and since I wasn't able to make a large order this week due to the snow and I don't have many vegetables in the house...
And ideas for a dressing to pour over a can of drained sliced beets?

Blend it & make horseradish salad with it.

That's the only form of beets I'd eat.

Why'd you buy beets in the first case? What did you intend to do with it? Whatever it was- make it now.

Blend it with what? I don't have horseradish on hand LOL
I think I'll just throw a vinaigrette over it.
(I originally bought it to make faux ketchup, but I use an updated recipe now that does not use beets. And besides, I don't have the other 2 canned goods that I would need for that faux ketchup recipe.)

cut up cucumbers and mix in, then add lemon juice, olive oil, salt, and pepper. You can also add potatoes for more of a vinaigrette type of dish.

You can make a Russian beet salad - dice the beets, add cooked diced potatoes, pickles, boiled carrots (optional) and purple onion cut small (optional). Dress with oil (can use olive), salt and pepper.

in case you didn't use em up yet. . .

I add sliced onions and dress with a bit of olive oil, some vinegar, and a splash of lemon juice. salt and pepper to taste. it's easy and my family likes it a lot!

Thanks everyone! I ended up making a dressing with rice vinegar, olive oil, oregano, garlic and salt. It came out very good.
