Ingredients:
6 pieces Chicken breasts
and for the Sauce:
2 Cups fresh Blueberries
1/4 Cup balsamic vinegar
3 Tbsp Honey
3 Tbsp Ketchup
1/2 tsp garlic powder
1/2 tsp ground ginger
Combine and heat all ingredients ( except chicken) in a pot.
As soon as it boils reduce to very low (simmer) for 10 minutes.
Sauce should have thickened.
Let it cool.
Blend the sauce until smooth.
To coat the chicken breasts with the sauce,
put 1/3 of the sauce with the breasts in a Zip Lock bag.
Marinate in the refrigerator for 30 minutes or an hour.
Keep the other 2/3 of the sauce for serving over the chicken once it is cooked.
Grill the chicken over medium high until cooked, 8 minutes.
( they mean a BBQ, but I'm sure you can just bake or broil them in the oven.
Perhaps it will take a bit longer to cook...)
When serving pour the rest of the sauce over the breasts.

yummmmmm--mmmy!!!! This sounds so good! Now the trick is to get my husband to agree to let me make something with blueberries....hmmmm...
Just one question, is the extra sauce refrigerated until use? If so, it's served cold? Or should it be warmed up? TIA

I have to admit I have never heard of chicken and blueberries together and it sounds pretty weird to me. But my kids all go so crazy for blueberries that I think I am definitely going to have to give this a try. Thanks for posting!
