I think this is it

1 Cup Sugar
1 Cup Flour
3/4 Cup Oil
12 oz Baby Food - Carrots
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
2 Eggs

Preheat oven to 350
Combine sugar, flour and oil
Add Carrots, baking soda, cinnamon and eggs
Mix until smooth
Place in cupcake holders 3/4 full
Bake for 30 minutes or until toothpick comes out clean in center

Add crumbs on top for last few min of baking time to make it devine!!!mmmm
