I have baked breaded chicken cutlets & rice that were cooked on Monday. When can they be eaten until?

Chicken gets funky after a few days, so I'd say finish them no later than Thursday. The rice may get dry before then. If not - you can eat it until it's inedible.

Meat, fish and poultry remain fresh for 2-3 days after they're prepared (assuming they're refrigerated properly).
Vegetables and grains, usually up to 5 days.

They are still good. They will taste better if finished today though.

I have found this website to be very helpful when I am not sure how long
things are good for.

That looks like a great website, auntie_em! I'm going to bookmark it.
