I need a good egg salad recipe.
Anyone have one?

I don't follow a recipe, I just hand grate the boiled eggs then add mayonnaise, dash of salt, black pepper and onion powder. It always seems to go so I guess people like it. We certainly do!

My dorm mother used to add caramalized onions. I generally think egg salad is disgusting, but this was really good.

Mash eggs
Add mayo, salt, black pepper, scallions, celery, and sometimes red onion.

My sil adds instead of the mayo she puts in olive oil, salt, pepper, and onions.

For something a little different try adding sliced green olives (the kind with pimentos inside), mayo, salt and pepper. Makes a great sandwich. (I also sprinkle the top with paprika.)

the best is hardboiled eggs, with carmelized onions, oil salt and pepper. most people who dont like egg salad love this cuz its not full of mayonaise.
