Does anyone have a recipe for carrot cake/muffins that's easy and uses baby jar carrots?

this is called carrot-pineapple kugel I think its kinda like a cake, never tried it though, u could maybe leave out hte pineapple and add a little other juice for wetness.

3 jars (12 oz) baby food carrots
4 eggs
3/4 cup oil
2 cup flour
1 1/2 sugar
1 small can crushed pineapple
1 tsp salt
1 tsp baking powder
2 tsp baking soda
2 tsp vanilla

mix dry and wet ingredients seperately
slowly add dry ingredients to wet, mix continouosly
bake in a greased 9x13 pan, 350 degrees F for 1/2 an hr

its from the kosher pallete cookbook:
8 oz of baby food carrots
1 c. flour
1/2 c. firmly packed dark brown sugar
1/2 c. white sugar
11/2 tsp baking powder
1/2 c. oil or applesauce
2 large eggs
1 tsp vanilla extract

preheat oven to 350
mix all ingrediants with electric mixture
pour into 9inch dish or muffin tins
cook muffins for 30 mins,9inch dish for a kugel cook for 45 or until knife comes out clean.

I know this post was froma while ago, but I have a recipe for a delicious muffins/kugel using babyjars of butternut squash. let me know if you're interested

Sure. Got it in the yated.

Mini Butternut Squash Bundt Kugel
2 small baby jars butternut squash
4 eggs
1 cup oil
2 cups sugar
1 tsp salt
2 T baking powder
2 C flour
2 tsp vanillar sugar
1 tsp. cinnamon

combine all ingredients and mix until smooth. Great and flour mini bundt pans.
pour mixture to 2/3. bake at 350 for 25 minutes and allow to coll 10 min before removing from pans.

can be bakes in muffin tins.

that's the recipe - I only made them in muffin tins.
served them as a side dish friday night. the dessert was finished that night so shabbos day I served them as dessert!!!

I make the carrot kugel recipe in spice & spirit using baby food carrots instead of grating them sometimes--works perfectly well.
