Break off the stems and peel the outer layer, I find that if I wash them, they get soggy.

Mushrooms absorb a lot of water, so it's not good to wash them or submerge them in water. You're supposed to wipe them with a damp paper towel.
I remove the stems and check the cap for worms. Then I slice the mushroom in half or quarters, depending on the size, and check for tunneling.

I've always wanted to know how to check mushrooms, too. You can't compare fresh mushrooms to canned. How do you check the gills? Do you even have to?

Wipe them with a hand towel.
