What can I do with all this chicken from soup?

Made my soup, and during the year when I make soup I either make bbq chicken or fajitas out of the leftovers, however, seeing as my kitchen is already pesachdig, I have no idea what to make from all this chicken that my kids will actually eat -- bonus if I can make it for dinner tonight, since otherwise I don't know what they're eating...

Help... (no chicken salad recipes, please, no one eats that but DH)

Stir fry all the veggies you want to get rid of (onions, zuchini, broccoli, carrots, mushrooms, peppers...)
add chicken orange juice garlic and soy sauce

sounds excellent up until the soy sauce since my kitchen is already ready for pesach. Also, what can I serve it 'over?" If it were during the year, I could stir fry and put over rice...

They do sell imitation soy which is pesachdik.

you could serve it over mashed potatoes and I would do it with just the veg and salt no soy sauce and orange juice or you could make a sweet sauce of brown sugar water and ketchup and seseme seeds

I make a chicken pot pie with mashed potatoes instead of crust which is yummy. It needs flour to thicken the sauce, but you could try subbing potato starch.

it has mushrooms and other veggies in but my kids would prefer it without veggies.

You could serve it over steamed cauliflower or spaghetti squash.

Instead of soy sauce, how about salt, pepper, ginger, and/or lemon?

If you don't need it for supper tonight, you could freeze it. (I assume this was from Pesach soup?)

You can use it to make eggrolls. I make them all the time for Pesach and they are a big hit. You make blintz leaves The mixture for the inside is shredded cabbage and the soup chicken and some salt and pepper. let that go for a while and then fill the blintz leave and fry. It is delicious!

You can make chicken and peppers instead of chicken fajitas using thin slices of onion, peppers (or carrots), drop of fresh garlic, salt, pepper, fresh ginger...

mix with mashed potatoes, salt and pepper, fried onions, and mashed veggies from soup (zuchinni, carrots) and stuff egg crepes with them. Or just use it plain over mashed potatoes.

Thank you all for your suggestions. I wish I'd seen the egg rolls one before I made dinner, but I don't know that I'd have had the patience to make crepes tonight. I ended up putting it in my food processor and grinding it up and then adding some eggs, garlic powder, onion powder and ketchup and made what turned out to be basically hamburgers made from the ground up chicken. One of my sons ate 4 patties. The baby hated them, dh liked them and my 12 year old dd liked them. MOstly, I used up the chicken in a way that was different and I managed to pull together dinner tonight.

I have frozen it in the past, but no one really eats it, so it sits in the freezer forever and my freezer space is a high commodity right now.

Thanks again, I'm bookmarking this so that next year when I have the same issue I'll know what to do.

easiest solution: de-bone the chicken and FREEZE it until after pesach
then you can do your regular stuff with it, or get creative (we do shepherds pie, stir-fry, shwarma)

I used to have the problem of left over chicken, till I started using chicken necks for the soup. together with the parsley, celery and soup vegetables, the soup gets a good taste. and all we need to eat at that point in the meal, after the soup is some chicken necks.
though I dont know what your family likes
