I recently made a cut called French Roast. Laid down 2 onions cut into slices in the bottom of the roasting pan. Peeled & quartered a couple potatoes & carrots. I put a sprinkle of salt, pepper & paprika on the meat, which I laid on top of the veggies fatty-side up. Then I covered the meat with ketchup (about 1/4 cup total) and filled the roasting pan with water until it was half-way up the meat. Cooked it covered at 350 for 3 hours. (It was a little under 3 pounds.) Remember to let it sit for at least 5-10 minutes before slicing AGAINST the grain. We didn't need a knife, it was amazing. And this from someone who doesn't usually cook red meat.
