Hi,

I'm making an upsherin - will be milchigs- and would like to make something that can be made into individual portions.
I was thinking cheese noodle kugel in deep, one portion, quiche pan but I dont think that will look so nice.

I'm already making one larger cheesecake so I dont want to do that individually.

Use little round pie pans or cupcake pans.

Pizza pockets or something similar; puff pastry stuffed with cheese and whatever you like, made into little triangles or rolls.

KBD has some sort of berry cheese blintz that is made in a cupcake form and it is pretty.

I'm pretty sure I typed it up once on here but can't find it now - I'll try to type it up later if I can.

What about individual quiches in mini tart shells - they can be bought premade.

Small bowls of strawberry soup with a dollup of yogurt.

Tuna burger sliders, spanakopita, devilled eggs (everybody I know just loves these!), noodle kugel baked in a flattish pan and cut into rounds with a cookie cutter, and don't forget sushi!

I have two recipes that you could make
1) Stuffed spinach shells

Ingredients
1 package Jumbo shells (cooked and drained) / or Manacotti noodles
1 lb. Cottage Cheese
2 cups shredded Mozzarella Cheese (one 8 oz. package)
2 eggs
2 onions - sauteed
1 tspn salt
1 lb. frozen spinach (ccoked and drained - according to package)
16 oz tomato sauce can - Note - I use around 1 and half jars of marinara sauce instead.
Cood shells and drain.
Cook spinach.
Sautee onions.
Mix cottage cheese, mozzarella cheese, eggs, onion, and spinach.
Stuff shells with mixture.

Pour 1/2 can tomato sauce in pan.
Put in shells.
Pour 1/2 sauce on top.

Cover - bake at 350 for 45 minutes.

Can sprinkle dried parsley flakes on top right before serve - to look nicer.
I find that this recipe makes 2 trays of 9x13.

2) Eggplant Rollatini

I have made this also with and without cheese.
I find the recipe a little confusing – bec. they go back and forth between steps. So read it through before you start.

I used a jar of Marinara sauce and regular linguini (not fini) – any type of flat spaghetti should work – fettuccini might be too wide.

I peeled the peel off of the eggplant that I was going to use as the chopped trimmings – but not off of the ones I was going to roll.

I put a little shredded cheese (a mixed type - not sure exactly what it was) in with the pasta – bec. I had a feeling my kids would mostly be eating the pasta and wanted some protein in there. I also put a small amount of cheese on the eggplant before rolling.

I also salted the eggplant and let it sweat on paper towels before I made this.

If serving for guests – might even look nicer with a little flaked parsley poured on top.

Sometimes I also add some spices to the eggplant before baking it – like onion powder and garlic powder – maybe salt and pepper also. Basically if you like eggplant it is good anyway it is made.
