Do you write a thank you note for a donation given to a school, shul, whatever in honor of the birth of your child? Additionally, would you write one if it was from a student for a "great year" as their teacher?

Why not? When somebody does something nice, you say thank you.

Yes, a gift is a gift.
Personally, I have one exception-
I don't think you need to write a thank you card for a thank you gift. A verbal thank you is enough is such a situation.

Only if I got some notification from the shul/institution/etc. Once someone told my MIL that she donated money for our birth, but we never got any sort of note in the mail from the place. As far as I'm concerned that warranted a thank you from MIL but not us.
