I am not the freezing type, I always make my food fresh.
Is it o.k. to fry a bunch of vegetables and freeze them? I make veg lasagne etc often for supper and frying in bulk and freezing would cut down the cooking and prep time significantly.
when I say vegetables I mean: onions, peppers, zucchini, mushrooms, tomatoes.

Well I've seen frozen vegetable mix sold at supermarkets so it should be possible. Though I think they're blanched not completely raw. I won't recommend freezing plain cut raw veggies if you don't want them to be soggy after cooking (like stir-fry).
I have frozen sauteed, completely cooked vegetables, like caramelised onions or sauteed grated carrots, for rice, meatballs, cottage pie, soup or casserole.
