Guests just cancelled on me and I already breaded the shnitzel but have not backed it yet. Is it better to first bake and then freeze or freeze and then bake. Can I freeze raw breaded chicken?

Freeze it raw.
I always do it, I often buy up to 20 pounds of chicken cutlets, and bread them all at once.

Would u defrost and then bake or put it in oven frozen? What about if you want to fry it, defrost and then fry?
