Mediterranean Meat Loaf (or turkey/chicken loaf)
1 lb ground turkey, chicken, or chopped meat
2 eggs, beaten
3/4 cup spinach, fresh or frozen
small chopped onion
1/4 cup breadcrumbs or similar
clove of garlic, chopped
1/2 tsp EACH cumin and black pepper
Mix together & bake in loaf pan at 350 for about 40 minutes.
