Isn't Dijon made of mustard and white wine?
Funny you should ask, I just bought some Dougie's Dijon yesterday so I wouldn't have to "think" during all the busy cooking this month.....

Honey mustard is honey and mustard. I'm not so sure that honey dijon is, but I'll go on some other site if you need me to.

This is the answer I got from my baking board:
"Dijon is a type of french mustard named for the city where it was invented. Honey dijon is a mixture of dijon mustard and honey.
White wine is used in the process of making it.
It is usually stronger and hotter than yellow mustard."
