Sweet potatoes with Cinnamon meringue

Sweet potatoes

Salt

Brown sugar

Egg whites

Sugar

Cream of tarster

Cinnamon



Roast 3 lbs potatoes in 400 deg oven about an hour or until tender. Let cool and then peel and dice. Toss with salt and 1/4 cup brown sugar in baking pan about half an hour.



While potatoes heat, make your meringue with 3 egg whites, 3/4 cup sugar, and a pinch of cream of tarter. Let mix until peaks are formed. Stir in cinnamon. Spoon meringue onto the potatoes and broil until brown.
