These are dh's 3 loves: marshmallow/peanutbutter and chocolate.
Anyone have a ice cream recipe incorporating any or all of these?

I make a Rocky Road ice cream which has a chocolate base, marshmallow bits, chocolate pieces, nuts, and I don't see why you can't add peanut butter swirl to it (or combine the PB/choc and use peanut butter cups broken up.)

I believe there's a great rocky road ice cream in the new Fresh 'n Easy cookbook. I don't have the cookbook, but I'm sure someone on this site does have it and may be able to type it up.

CHOCOLATE ROCKY ROAD ICE CREAM

3 eggs separated
1/3 c sugar
2 -(31/2) oz bars good quaulity parve choc
8 oz dairy whip topping
3/4 c blanched slivered almonds toasted
3/4 c marshmallows

beat egg whites till stiff. gradually add suger until stiff peaks foam. set aside

chop the choc.into pcs melt over double boiler on in a microwave 35-45 seconds on high
leave some pcs semi melted so u have some chunks in the ice cream. let cool slithly.

using a fork. mix egg yolks w/ cooled choc until thoroughly combined . set aside.
whip the topping till stiff. add the choc/ egg mixture. & continue mixing until it is uniform
in color. fold in whites. toasted almonds & mini marshmallows. pour into 6 - cups container
freeze till firm
