Anyone have a mushroom kugel recipie that I can use canned mushrooms?
I'd prefer one with another veggie as well

This one is delicious. It calls for 12 button mushrooms, which I use fresh, but can be made with canned.

It is on the mushy side, but really really good.

Zucchini Mushroom Kugel

3 eggs
1 c oil
¼ c sugar
2 c flour
1 ½ t salt
1 t baking powder
4 medium-large zucchini, 2 peeled, 2 unpeeled
1 onion
12 button mushrooms
1 garlic clove, minced
pepper to taste

Preheat oven to 350
In a bowl, mix the eggs, oil & sugar. Mix the flour, ½ t salt & baking powder together & pour into the egg mixture. Mix well. The batter will be a stiff consistency.
Grate the zucchini very finely, using the small holes of the grater. Add 1 t salt to the zucchini & mix. Place zucchini in a colander set up over a bowl to let all the liquid drip out.
Grate the onions, mushrooms & garlic to prepared batter. Mix to combine.
Spoon batter into greased muffin tins. I use round tins instead and bake one hour.
Bake for ½ hour.

3 med. onions
1 can mushrooms
1 cube mushroom soup mix (I've used 2-3 tbsp onion soup mix instead)
3 eggs
pie crust

saute onions in a little oil till translucent (I use very little, I think the original recipe called for 3 Tbsp but I found that to be too much)
add can of mushrooms and simmer for 5 minutes
remove from heat and add eggs and mushroom soup cube
mix and pour into pie crust
bake on 350 until golden
