can you share your matzo meal cakes and cookies recipe?
I have a bunch of early risers and need mezonot to be motzi kidush.

Here is a great recipe for kookie brittle:


1 cup/s Margarine
1 1/2 teaspoon/s Vanilla
1 teaspoon/s Salt
1 cup/s Sugar
3/4 cup/s Potato Starch
1/2 cup/s Matza Cake Meal
6 ounce/s Chocolate Chips
1/2 cup/s Chopped Nuts

Preparation
Cream margarine, vanilla and salt. Beat in the sugar. Add the cake meal, potato starch, and chocolate chips and mix well. Press mixture into a 10x15 inch pan. Sprinkle the nuts on top. Bake at 325F for about 25 minutes. Cool. Break into pieces.

Here is another recipe for Pesach banana pecan muffins:


1/2 cup/s Oil
3/4 cup/s Sugar
2 Eggs
1/2 cup/s Potato Starch
3/4 cup/s Matza Meal
1 teaspoon/s Baking Soda
1/2 teaspoon/s Cinnamon
3/4 cup/s Pecans
1 1/2 cup/s Mashed Bananas


Preparation

Line muffin tins. Preheat oven to 350F. Mix the oil with the sugar, add the eggs one a time beating after each addition. Add the bananas. Combine the potato starch, matza meal, baking soda and cinnamon. Add the nuts add the dry mixture. Do not over mix. Pour into tins and fill to the top. Bake 25-30 minutes.
