Yeah I remember it was really good! and I kept every other recipe but this one .

It was from Joy of Kosher. Recipe by Leah Schapira.
Carmelized French Roast
1 1/3 c. sugar
3-4 lb. French Roast
2 large onions sliced in rounds
salt and pepper to taste
paprika to taste
2 T. potato starch
2 T. cold water
1. Rinse the French Roast and pat dry.
2. Season well with salt, pepper and paprika.
3. Place the sugar in a braising pan (pot should be large enough to fit roast, covered).
4. Over low heat, cook sugar, stirring occasionally until sugar melts and turns into a caramel color.
5. Add the meat to the pan.
6. Using a fork or tongs, rotate the meat, searing on each side two times.
7. When all surfaces of the meat is browned, lift the meat and place onions underneath. The onions will release their juices as they cook and together with the sugar, create a sauce.
8. Cover and let it cook over medium-low heat for 3 hours (flame should be low enough the meat won't burn but high enough that the sauce is still simmering slightly.)
9. Combine potato starch and water. Add to the sauce.
10. Cook until the sauce thickens.
11.Slice meat and serve with sauce.
