I'm looking for a "SIMPLE" vegetable soup recipe with no fancy ingredients. Also no broccoli.
I want to make a big pot, and freeze it in small containers. So it has to freeze well.

Ingredients:
onions
carrots
squash
potatoes (optional)
salt and pepper to taste
Peel and dice vegetables. Sautee first the onions, then add carrots and sautee, then add squash and sautee. If using potatoes, add those and sautee last. Add water and cook till vegetables are soft. Use a stick blender (or food processor or regular blender) and puree most of the vegetables. Leave a few chunks for interest. Add salt and pepper to taste.
Freezes well without the potatoes.

I go to the store and buy one or two of a whole bunch of veg. Then I either dice them all, or shred them all in the food processor. Chuck the chopped/shredded veg in a pot with some tomato paste, salt, pepper, garlic, and maybe some herbs (I like using Dorot frozen cubes of dill or parsley) and cook it all til the chunks of veg are soft. Shredding reduces the cooking time. It's really simple and tastes deliciously of vegetables.
I use the following, in general: I'll get most of the veg on this list, but it changes from time to time depending on what I already have or can get wherever I'm shopping.
Carrot
Potato
Sweet potato
Zucchini
Yellow squash
Leeks
Mushrooms
Turnip
Parsnip
Onion
Celery

Bag of frozen mixed vegetables
can of chickpeas
diced green pepper
can of tomato sauce (or to taste)

Yes, but then it's regular vegetable soup. Blending it makes it totally different.

turkey bones
great northern beans
celery
potatoes
sweet potatoes
salt
black pepper
slice everything and cook....you can omit the bones or beans if you want

Vegetable Soup
2 big onions, sautéed
3 carrots
3 Yukon gold potatoes
1-2 plum tomatoes
2 yams
3 zucchinis, not peeled
3 crushed garlic
salt, garlic powder, crushed red pepper spice, to taste
water
Cook for 1 1/2 hours
